I am Sarah and I am really happy you stopped by. Let me take a minute to tell you about myself and what in the world I am trying to do here. I am a Mommy of two beautiful children who have a palate way too advanced for their combined 6 years of living. They eat everything from sushi to raw cauliflower and ask for more. Every year for Lent we go vegan, my kids do a modified vegan-vegetarian with the occasional chicken nugget here and there but for the most part we give it all up. Why? Well coming from a Coptic orthodox tradition it is what we all grew up doing for religious reasons. However, my husband and I have found other benefits outside of traditions; benefits that make our bodies both thankful and resentful to say the least. This year prior to Lent starting we were well on our way to having a complete Paleo diet the kids were into it and thoroughly enjoyed almond crusted chicken and cauliflower rice for example. Going vegan this year was a challenge and we knew that at the end it would be quite challenging to go back to a Paleo diet. We are by no means strict with our diets, but we found that the benefits of a Paleo diet really do work for our family and its growing needs. Stick around and you will see just how challenging this transition is, and maybe learn a couple of new things and possibly change a misconception or two. I am not promoting a strict diet of any kind. I am simply trying to figure out what works best for me and my family and promoting or challenging you to do the same.
